Ingredients
Mince Meat 300 grams
Eggplant 4
Chopped parsley 2 tablespoons
Thyme 1/2 teaspoon
Sliced mushrooms 6-7
Chopped onion 1
Crushed garlic 1-2 cloves
Cheese Pizza 4 tablespoons
Tomato paste 2 tablespoons
Salt and pepper To the extent necessary

Recipe:

  1. Begin by peeling the eggplants and cutting off the stems. Then, slice them lengthwise to a thickness of half a centimeter and sprinkle some salt over them to remove any bitterness and enhance the flavor.
  2. Let the salt sit on the eggplant for thirty minutes to remove the bitterness, then rinse with cold water and dry.
  3. Fry the eggplant slices in a small amount of oil until they turn golden.
  4. In a separate pan, sauté chopped onions in a little oil until they become translucent. Then, add crushed garlic and fry for two to three minutes.
  5. Add the minced meat to the pan and fry until its color changes. Next, add sliced mushrooms and fry for 4-5 minutes until the water is absorbed.
  6. To the pan, add parsley, thyme, salt and pepper, and fry for a few seconds.
  7. Add tomato paste to the ingredients and fry until the raw smell disappears.
  8. Place approximately one tablespoon of meat sauce in the center of each eggplant slice and roll it up.
  9. Arrange the eggplant rolls in a Pyrex dish and sprinkle some pizza cheese over each of them.
  10. Heat the dish containing the rolls in the oven at 180 degrees Celsius for 10-15 minutes until the cheese is melted and bubbly.
  11. Remove the dish from the oven and garnish the eggplant rolls with tomato sauce.
  12. To make the tomato sauce, grate tomatoes and heat them with a pinch of salt, pepper, sugar, and vinegar until it thickens.

How to prepare eggplant rolls with minced meat in a grilled way (diet)

Ingredients
Eggplant 4
Mince Meat 750 grams
Onion 1
Tomato 4
Tomato Paste 1 tablespoon
Crushed green pepper 2
Salt and black pepper To the extent necessary

Recipe:

  1. Begin by peeling the eggplants and slicing them into pieces that are half a centimeter thick. Sprinkle salt over the eggplant slices and allow them to sit for 30 minutes before washing and drying them with cold water.
  2. Grill the eggplant slices on both sides until they are soft.
  3. Grate an onion and mix it with minced meat, green pepper, two tomatoes, and salt. Knead the ingredients well until they form a dough.
  4. Shape the mixture into small meatballs that are as wide as the eggplant slices.
  5. Place the meatballs in the bottom of a pan and fry them on low heat until they are cooked through.
  6. Layer two slices of grilled eggplant on top of each other and place a meatball in the center.
  7. Fold the eggplant slices around the meatball and secure with a toothpick. Top with a slice of tomato and a piece of bell pepper.
  8. Repeat with the remaining eggplant slices and meatballs, and place them in an oven-safe dish.
  9. In a separate bowl, mix some tomato paste with boiling water, two tablespoons of broth, and a pinch of salt and pepper. Pour the sauce over the eggplant rolls.
