Esquites  Recipe:

  1. To prepare Mexican corn with mushrooms and pizza cheese, first place a pan (with a lid) on low heat. Add the butter and let it melt, then add the corn and stir well.

Note: You can use corn cobs instead of corn kernels. To do this, cook the cobs with water and salt before adding them to the butter. Alternatively, to save time, you can use canned corn and drain it before adding it to the butter.

  1. Next, add the chopped mushrooms and a spoonful of lemon juice and continue stirring the ingredients. Close the lid of the pan and let it cook for less than 5 minutes to cook the ingredients and drain the mushrooms.

Tip: Lemon juice is important to prevent the mushrooms from turning black. You can also cook the mushrooms separately in another pan, and then add them to the butter and corn mixture.

  1. To continue the cooking process, open the lid of the pan after draining the mushrooms so that the excess water evaporates. Add mayonnaise, salt, pepper, thyme, and onion powder and mix well until the sauce is evenly mixed.

Tip: If you want to use ham, add it before adding the sauce and stir for 2 minutes.

  1. To make the Mexican corn more flavorful, add the pizza cheese and Parmesan cheese (optional) to the pan, and mix with low heat until the cheese is fully combined with the other ingredients.

Close the lid of the pan and remove it from the heat and let the cheese soften for 3 minutes. Serve it in a suitable container, and garnish with additional thyme.
